Microgreens – microgreens today are one of the popular types of vegetables, which in addition to flavor and taste, are also a source of biologically active. Cultivated plants are used to grow microgreens, about 100 species of plants are known to be used today. Our study evaluated the effect of light intensity on the activity of biologically active microgreens in four species of cultivated plants: radish, arugula, watercress, and broccoli. Plants were grown under three different light conditions: 567, 1568 and 4330 lux, respectively. Microgreens were grown by hydroponics in meltwater. Samples for the study were collected on day 7 of plant growth. To determine the content of biologically active substances (BAS) – low molecular weight antioxidants (LMBA), ascorbic acid and flavonoids – we used water-alcoholic extracts of the studied plants, spectrophotometric method. According to the results of the data obtained, it was concluded that the highest content of BAS was determined in the microgreens grown under the lighting conditions of 4330 lux. The content of biologically active substances in microgreens grown under 4430 lux conditions was 33% higher than under 1568 lux illumination conditions. Thus, the highest ascorbic acid content under natural light was 22.9±0.39 mg/g in watercress, under artificial special light the flavonoid content in broccoli was 35.65±1.31 mg/g, and low molecular weight antioxidants in watercress 598.04±64.12 mg-eq quercetin/g.
