In this paper, the dielectric properties of eggshells, the structure of the egg shell, and the analysis of hatching egg indicators depending on the age of the bird are considered in order to identify the age of egg production with the thickest shell. In the conditions of modern production and consumption, there is an increasing need to develop environmentally friendly and sustainable materials, therefore, an innovative biological dielectric based on hatching egg shells, which is a by-product in poultry farming, can be created from the shell.
