Bryansk region borders with two countries — Ukraine and Belarus, and also Russian regions such as Smolensk, Kaluga, Orel, Kursk regions. Eating habits of residents of the Bryansk region was influenced by its border location. The article discusses the culinary peculiarities of dishes of Russian and national cuisine, due not only products, but also by features of their preparation. The article discusses the rituals and rituals of the Kuban residents associated with bread as one of the main ritual dishes and food symbols of the calendar holidays of the summer-autumn cycle.
