The authors discuss the concept of gastronomic tourism and gastronomic tours structure, distinctive features of this type of tourism, as well as the factors influencing the development of this tourism trend both in the world and in Russia. The authors draw the special attention to the study of culinary merits of Russian regions and their attractiveness for foreign tourists and identify the problems in the development of gastronomic tourism in Russia and the ways of their solution.
In the modern tourism industry, various domestic tourist destinations account for up to 90% of the total number of tourist trips. The interest in traveling around Russia among its residents is constantly growing. Today, Nizhny Novgorod is not only a historical site, but also a gastronomic destination. Here, the Volga cuisine and ancient Russian traditions are intertwined with global culinary trends, creating a unique gastronomic portrait of the city.
The development of food industry enterprises in Russia and, in particular, in the Nizhny Novgorod region is an important component of the economic growth and social well-being of the region. In recent years, there has been a dynamic development of the restaurant business, cafes and other forms of the food industry, which is associated with a change in consumer preferences, an increase in tourist attractiveness and the development of urban infrastructure. In this context, it is worth noting the influence of various factors on the development of the industry, such as demographic changes, the development of digital technologies, as well as economic realities. In the Nizhny Novgorod region, which has a rich history and cultural heritage, the development of public catering can serve not only as a source of income, but also contribute to strengthening local identity and cultural traditions.
