This scientific work is devoted to the study of wild plants in the food industry. Special attention is paid to empirical research methods. The article describes in detail the use of candied and dried pansies flowers in the preparation of cheesecake. The author comes to the conclusion that it is worth introducing baking with the use of wild plants into the diet.
