The paper discusses the meaning of the term "restaurant business" based on the analysis of the language used in the economic literature. The necessity of definition of the restaurant business in author's edition and is determined by its place in the infrastructure of commercial and industrial complex on the basis of specific features of the sector of the economy.

The article deals with the main questions of imitating modeling method application to economic objects researching for the purpose of their business processes optimization. As a mathematical model of services rendering sphere, the author considers the system of mass service, discrete and event type of imitating modeling is chosen for imitation of its activity. Practical application of the method is shown on the example of service station work model development by means of Anylogic program and carrying out optimizing experiments.
