The article deals we developed new ways to speed thermal sterilization of canned food in airtight containers using a step heat treatment of canned food, which allows their implementation using the principle of heat recovery. Empirical depending using a mathematical planning experiments which can be used to develop new modes of heat sterilization of canned food and designing devices for the heat treatment step using the heat treatment
