Nutrition is an essential component of students' health. Recently, there has been a steady trend of deterioration in the nutrition structure of students in Russia, that is confirmed by numerous publications on this topic. The paper presents an analytical review of various researches devoted to the public catering of students. Some recommendations on the improvement of university catering organization are formulated.
The article is devoted to the determination of nutrition stereotypes of students of pediatric, medical and dental faculties of the Smolensk State Medical University to create preventive measures and improve these indicators during the examination session. The study suggests that the exam session as a stressful life event has a "damaging" effect on students. The revealed peculiarities of eating behavior and its disorders can be the cause of the formation of various diseases already in the process of studying at a university, and also serve as a risk factor for overweight and obesity in the future. This, of course, should be the basis for the development and implementation of appropriate hygiene measures adapted to the conditions of higher education.
Hygienic assessment of organized nutrition of junior schoolchildren attending the extended day group
Schoolchildren's catering requires close attention, which is explained by the ongoing processes of growth and development, the formation of the neuropsychic sphere, as well as the high mental and physical stress of modern forms of education, accompanied by significant energy costs. The purpose of the study: analysis of the daily rations of organized meals for students aged 7-10 years. Materials and methods. A comparative analysis of the qualitative and quantitative indicators of the composition of the diet of children was carried out using the current regulatory documents, sanitary-hygienic, statistical and epidemiological research methods. Results. When analyzing the daily rations of organized nutrition for children, it was found that the recommended norms for the consumption of dishes and products in terms of their volume (mass) are not observed. The nature of the distribution of the calorie content of the daily diet for individual meals meets the recommended requirements, however, there is an insufficient energy value of the afternoon snack (with the recommended at least 10%, the actual calorie content was 7–8% repeatedly). When studying the nutrient composition, the optimal intake of proteins, excess fats and insufficient carbohydrates in 60% of diets were revealed. Conclusion. Our analysis of the qualitative and quantitative indicators of the composition of the diet of children attending the extended day group showed that it does not meet hygienic requirements.
